Receipe of Rice Kheer (Rice Pudding)
खीर बनाने की विधी
Serves: 3-4 bowls
Preparation time: 5mins
Cooking time: approx 30mins
1 litre full fat milk
1/3rd cup Basmati rice (बासमती चावल)
½ cup sugar (or less as per choice)
Assorted chopped nuts कटे हुए सूखे मेवे (Almonds बदाम, Cashews काजू , Pistachio पिस्ता)
Some raisins किशमिश (optional)
Cardamom powder ईलायची पाउडर, a pinch
Few strands of saffron केसर
Bring the milk to boiling in a clean heavy bottom vessel. Slow the gas, add washed rice in the milk and the saffron strand. Boil till the rice is cooked. Now add the sugar and let it boil for 5-7 mins. Off the gas.
Garnish with thinly chopped nuts and raisins and cardamom powder. Eat it hot or chilled.
Any rice of your choice or taste can be used.
Occasionally keep stirring or the milk can burn and give a bad smell to the Kheer
Check the doneness of rice by taking a grain and pressing it
Instead of chopped nuts you can add powdered nuts or Everest milk masala
Low fat milk and sugar substitute can be used to make a low calorie version.
Enjoy it as a dessert or can be eaten with plain or masala puri.
